Ice cream in any form is the ultimate treat on a hot summer day. It doesn’t matter if it is hard or soft, whether it’s in a simple bowl, scoops on a cone topped with sprinkles, a gooey sundae, or in the shape of a cake, you just can’t beat an ice cream on a hot sticky summer day. Oh so who is kidding who, ice cream on any day is the ultimate treat. The hardest part of eating ice cream is choosing which version I want most. I love ice cream sundaes with whipped cream, sprinkles, and hot fudge. However, I love a good ice cream cake with a cake base, 2 different kids of ice cream and crunches in the middle. So I thought to my self “hmmm self why not just combine the 2”. Well, apparently I’m not the only one to think this would make a fabulous dessert, apparently there are lots of version of a deep dish ice cream cake.
The difference between those other recipes and mine is that my recipe is real easy to make and uses some store bought ingredients. This is mostly a gather the ingredients and assemble kind of recipe. The only thing you have to prepare and bake is the bottom cake layer. I use a box brownie mix. I like the Ghirardelli double chocolate brownie box mix but you can use any brand. The recipe even works if you are using a Blondie mix instead. The cake is topped with a layer of whipped cream which I whip myself, but you can also use any ready made whipped topping. Whatever you do, DON’T use the canned variety. The canned whipped cream has a lot of air in it. It will deflate quickly and become watery. Trust me on this one because I tried it and it made a big mess.

Ingredients
1 Box Brownie Mix
1 Package Oreos crushed
3-4 TBS Milk
2 1.5 quart Containers Ice Cream
1 Container of Whipped Topping or 4 cups of Whipped Cream (whip 2 cups cold heavy cream with 1/4 cup confectionary sugar and 1 tsp vanilla extract)
Your favorite Sundae Toppings
1. Bake brownie mix according to package directions in a 13*9 inch deep pan. Set aside to cool.
2. Make the cookie crunch by combining crushed Oreos with 3 tablespoons of milk. If cookies seem to dry add additional milk a tablespoon at a time. Too much milk will result in a muddy looking mess.
3. Assemble the cake by spreading the first container of ice cream on top of the brownie layer. Freeze for 30 mins.
4. Add the cookie crunch layer on top of the ice cream and freeze for 30 mins.
5. Spread the 2nd container of ice cream on top of the cookie crunch freeze 30 minutes.
6. Add whipped topping.
7. Top with your favorite Sundae toppings such as sprinkles, nuts, chocolate fudge syrup, cherries. Freeze for 1 hour or overnight.
8. Enjoy your deep dish Ice Cream Sundae Cake. It may be necessary to warm your knife under warm water to cut through the layers.
